Renowned chef Franck Giovannini has a lot on his mind these days—and not just about what he’s going to serve when l’Hotel de Ville in Crissier reopens next week. He’s also busy reorganizing the kitchen and dining room to comply with new social distancing and hygiene standards. “I really hope we will be able to respect those measures of course, but especially to offer the same experience to our guests,” he says. The restaurant is one of Switzerland’s most prestigious with three Michelin stars. Despite strong demand for reservations, he says he is reducing capacity by about 30 percent to create a safer space.
